The Angus cattle on Dr Chevallier's farm are artificially bred to insure quality livestock. Angus beed if the preferred type of meat served in fine restaurants, providing the best mix of muscle and marbling. A tender cut of meat is preferred by the consumer, and Angus beef can provide that in a grassfed environment. They thrive on grass and produce a very high qualitly end product.

An important thing to consider with grassfed beef and lambs is that there are no added hormones fed to the livestock in order to make them grow faster. This has become a recognized potential problem in the food industry.
