Dr. Chevallier raises only Katahdin sheep. This breed of sheep is considered a ímeatí breed only as they do not produce a fleece and therefore do not require shearing.  They are hardy, adaptable, low maintenance sheep that produce superior lamb crops and lean, meaty carcasses.  Lambs of this breed produce a high quality, well-muscled meat that is naturally lean and consistently offers a very mild flavor.
